Author's Notes

If fresh cherry tomatoes are unavailable, use two 16oz cans of cherry tomatoes and omit the water from the recipe.

You can swap out the spinach in this dish for 2 cups of frozen baby peas. Add them as you would the spinach at the end of cooking.

Any leftovers can be refrigerated, covered, for up to 3 days, and reheated in a microwave.

Preheat the oven to 350 degrees F (180 degrees C).

Put the White Beans (2 cans) and Cherry Tomatoes (2 pckg) into a 9x13-inch deep baking dish and sprinkle with the Italian Seasoning (1/2 Tbsp), Kosher Salt (1/2 tsp), and Ground Black Pepper (1/2 tsp). Add ⅓ cup water to the pan and gently mix everything together.

Nestle the Pork Sausages (8) into the pan, then drizzle them with Olive Oil (2 Tbsp). Cook for 25 minutes, turning the sausages halfway through cooking. At the end of the cooking time, the sausages should be golden brown and the tomatoes will have collapsed.

Remove the sausages to another plate and add the Fresh Baby Spinach (1 pckg) to the pan. Gently mix through and return the pan to the oven for 3 minutes to wilt the spinach.
