Tortellini Soup with Sausage & Spinach

A quick flavorful soup that comes together in under 30 minutes. Cheese tortellini cooks up with chicken stock, mild Italian Sausage, hearty beans, and healthy spinach. This soup tastes and looks like it took much longer to make.

Cheese Tortellini

Jarred Minced Garlic

Fire Roasted Diced Tomatoes

Cannellini White Kidney Beans , drained, rinsed

Mild Italian Sausages

Cooking Instructions

Heat a large pot over medium-high heat on the stovetop.

Add in the Mild Italian Sausages (1 lb) and brown, breaking up large pieces with a spoon.

Once the meat is browned add in the Jarred Minced Garlic (1 tsp) , Fire Roasted Diced Tomatoes (1 can) and their juices, Kosher Salt (1/2 tsp) , and Frozen Spinach (1 pckg) . Stir to combine with the meat.

Add in the Chicken Broth (4 cups) and Water (2 cups) . Turn the heat to high and bring it to a boil.

Once the liquid is boiling, turn the heat back down to medium-high. Add in the Cheese Tortellini (1 pckg) and Cannellini White Kidney Beans (1 can) . Cover the pot with the lid and simmer for 6 minutes until the tortellini is just cooked.

Serve warm.

Author's Notes

If you keep your tortellini in the freezer, you can still make this dish. The cooking time, however, might need an additional 2-3 minutes.
