Cooking Instructions

For the batter, place All-Purpose Flour (1 cup), Corn Starch (4 tbsp), Baking Powder (1 tsp), Cayenne Pepper (1 tsp), Ground White Pepper (1/2 tsp), Salt (1 tsp), Freshly Ground Black Pepper (1 tsp) into a mixing bowl.

Add the Beer (1 cup) and whisk vigorously until smooth. Allow the batter to stand for 30 minutes before use.

Mix All-Purpose Flour (3/4 cup), Salt (1 tsp), Ground Black Pepper (1/2 tsp), Ground White Pepper (1/4 tsp), and Cayenne Pepper (1 pinch) onto a large plate.

Heat the Cooking Oil (as needed) for deep frying at 360–375 degrees F (180-190 degrees F). At this stage, pop the French Fries (7 3/4 cups) in a 400 degrees F (200 degrees C) air fryer for 8-10 minutes (or bake on a tray in the oven for 15–20 minutes) until golden and crispy.

In a medium (not metal) bowl, pour boiling water over the Frozen Green Peas (1 1/2 cups) and rinse them with cold water to replenish them.

Once the oil is moderately hot, coat the Frozen Cod Fillets (4) well in seasoned flour, followed by a generous coating of batter. Allow excess to drip off.

Fry fish until golden brown on both sides for about 8–10 minutes (depending on the thickness of the fish). When cut open, the flesh should be white and opaque and flake apart.

Place on a kitchen paper towel to absorb excess oil. Reheat peas and Butter (2 oz) briefly in a microwave until butter is melted and seasoned. Season the fries too.
9.
Serve crispy fried fish immediately with fries, buttery peas, Tartar Sauce (to taste), and Lemon Wedge (1).
Author's Notes
While Cod or Haddock is the most traditional option, Tilapia is a good and cost-effective option too.
The best way to thaw out frozen fish is to take it out of the freezer in the morning and keep it in the fridge to thaw out. If in a rush, submerge frozen fish in cold water until defrosted.
To test if the oil is hot enough for deep frying, drop a dollop of batter into the oil, if it sizzles and floats to the top immediately, you are ready to fry! If the oil is not hot enough the fish will stick to the base of your pot or frying basket, which is never fun.
