Step 1
Preheat oven to 425 degrees F (220 degrees C).
Step 2
On a large sheet pan, combine
Fingerling Potatoes (4 1/2 cups)
,
Cauliflower (1 head)
,
Red Onion (1)
, and
Bell Peppers (3)
.
Step 3
Add
Basil Pesto (3 Tbsp)
and mix well to combine.
Step 4
Nestle the
Italian Sausage Links (1 lb)
in the pan along with the veggies.
Step 5
Season everything with
Kosher Salt (1 tsp)
and
Freshly Ground Black Pepper (1 tsp)
.
Step 6
Place sheet pan in oven and roast for 25-30 minutes, or until vegetables are browned and the sausage has cooked to an internal temperature of 155 degrees F (70 degrees C).
Step 7
Remove sheet pan from oven and allow to cool slightly.
Step 8
Plate the dish by spooning roasted veggies into a bowl and adding
Fresh Mozzarella Pearls (1/2 cup)
. Stir gently to combine and top with sliced sausage. Spoon a little more pesto on top and enjoy.
