Feel free to switch up the veggies for whatever you have; brussels sprouts or broccoli would also be great in this recipe.

Preheat oven to 425 degrees F (220 degrees C).

On a large sheet pan, combine Fingerling Potatoes (4 1/2 cups), Cauliflower (1 head), Red Onion (1), and Bell Peppers (3).

Add Basil Pesto (3 Tbsp) and mix well to combine.

Nestle the Italian Sausage Link (1 lb) in the pan along with the veggies.

Season everything with Kosher Salt (1 tsp) and Freshly Ground Black Pepper (1 tsp).

Place sheet pan in oven and roast for 25-30 minutes, or until vegetables are browned and the sausage has cooked to an internal temperature of 155 degrees F (70 degrees C).

Remove sheet pan from oven and allow to cool slightly.

Plate the dish by spooning roasted veggies into a bowl and adding Fresh Mozzarella Pearls (1/2 cup). Stir gently to combine and top with sliced sausage. Spoon a little more pesto on top and enjoy.
