Author's Notes

Add more vegetables to this salad as desired: canned corn is great and diced cucumber would also be delicious. For more protein, include a few chopped hard-boiled eggs.

Brush Flank Steak (1 lb) with Neutral Oil (1 Tbsp) and season with Salt (1 tsp) and Ground Black Pepper (1 tsp).

Cook on a grill or grill pan over medium-high heat for 5-7 minutes per side, or until the steak is cooked to your liking (medium is 140-150 degrees F or 60-65 degrees C).

While the steaks cook, divide the Romaine Lettuce (1 head), Cherry Tomatoes (2 1/4 cups), Red Onion (1/2), and Colby Jack Cheese (1 cup) into serving bowls.

Remove steaks from the heat and allow them to rest for about 5 minutes before slicing.
