Step 1
Line a half-baking sheet pan with parchment paper, and preheat the oven to 400 degrees F (200 degrees C).
Step 2
To a half-baking sheet pan, add
Italian Sausage Links (1 lb)
,
Yellow Onion (1)
,
Baby Bell Peppers (1 pckg)
, and
Cherry Tomatoes (4 cups)
. Drizzle with
Olive Oil (as needed)
and sprinkle with
Sea Salt (1 Tbsp)
and
Ground Black Pepper (1 tsp)
.
Step 3
Bake in the oven for 20-25 minutes, turning the sausage and peppers over halfway through until brown and the peppers are just slightly blistered.
Step 4
Add the
Polenta (3 cups)
to a medium-sized microwave-safe bowl along with the
Chicken Broth (1 cup)
. Smash with a fork to microwave on high for 2 minutes, add
Parmesan Cheese (2/3 cup)
, and stir.
Step 5
Cover and microwave for another 2 minutes and stir, and if needed add
Sea Salt (1 Tbsp)
and
Ground Black Pepper (1 tsp)
.
Step 6
Add chicken broth, 1 tbsp at a time, stir and microwave for a minute at a time until desired consistency.
Step 7
Serve sausages and peppers over polenta with
Parmesan Cheese (2/3 cup)
