Author's Notes

Mini sweet bell peppers are located in Wal-Mart’s produce section, but if you can’t find them, regular-sized bell peppers will of course work.

Polenta comes in an 18 oz roll that you can find at Wal-Mart, and they also carry a dry form in a bag. If you get the dry form, use 1 cup of polenta to 3 cups of broth or water.

If you don’t have parchment paper on hand, aluminum foil is a great substitute.

Line a half-baking sheet pan with parchment paper, and preheat the oven to 400 degrees F (200 degrees C).

To a half-baking sheet pan, add Italian Sausage Link (1 lb), Yellow Onion (1), Baby Bell Pepper (1 pckg), and Cherry Tomatoes (4 cups). Drizzle with Olive Oil (as needed) and sprinkle with Sea Salt (1 Tbsp) and Ground Black Pepper (1 tsp).

Bake in the oven for 20-25 minutes, turning the sausage and peppers over halfway through until brown and the peppers are just slightly blistered.

Add the Polenta (3 cups) to a medium-sized microwave-safe bowl along with the Chicken Broth (1 cup). Smash with a fork to microwave on high for 2 minutes, add Parmesan Cheese (2/3 cup), and stir.

Cover and microwave for another 2 minutes and stir, and if needed add Sea Salt (1 Tbsp) and Ground Black Pepper (1 tsp).

Add chicken broth, 1 tbsp at a time, stir and microwave for a minute at a time until desired consistency.

Serve sausages and peppers over polenta with Parmesan Cheese (2/3 cup).
