Step 1
Preheat the oven to 400 degree F (205 degrees C).
Step 2
Spray a 12 well muffin tin generously with the Coconut Oil Cooking Spray (to taste) . Soak the Old Fashioned Rolled Oats (2 cups) in the Apple Cider (2 cups) in a large mixing bowl for 10 minutes to soften them and let them absorb the flavor.
Step 3
Add in the Apple Sauce (1 cup) , Dark Brown Sugar (1 Tbsp) , Baking Powder (1/2 Tbsp) , Baking Soda (1 tsp) , Ground Cinnamon (1/2 Tbsp) , Salt (1/2 tsp) and Ground Nutmeg (1/2 tsp) . Stir it all together well.
Step 4
Stir in the All-Purpose Flour (2 cups) just until it disappears. Don't overwork it. Fill each muffin well pretty much to the top, then sprinkle a handful of the Vegan Caramel Chips (to taste) on top and press them into the batter so they stick.
Step 5
Bake the muffins until golden brown and baked through, about 20 minutes. Insert a toothpick into the center and check that it comes out clean.
Step 6
Let them cool for a bit in the tin, then carefully remove them to a cooling rack to finish cooling. Serve and enjoy!
