Preheat the oven to 400 degrees F (200 degrees C).

Spray a 12 well muffin tin generously with the Coconut Oil Cooking Spray (as needed). Soak the Old Fashioned Rolled Oats (2 cups) in the Apple Cider (2 cups) in a large mixing bowl for 10 minutes to soften them and let them absorb the flavor.

Add in the Apple Sauce (1 cup), Dark Brown Sugar (1 Tbsp), Baking Powder (2 tsp), Baking Soda (1 tsp), Simply Organic Cinnamon, Ground (2 tsp), Salt (as needed) and Ground Nutmeg (as needed). Stir it all together well.

Stir in the All-Purpose Flour (2 cups) just until it disappears. Don't overwork it. Fill each muffin well pretty much to the top, then sprinkle a handful of the Vegan Caramel Chips (to taste) on top and press them into the batter so they stick.

Bake the muffins until golden brown and baked through, about 20 minutes. Insert a toothpick into the center and check that it comes out clean.
