Place one side of the Sourdough Bread (8 slices) flat on a cutting board and top with 1/4 cup of Shredded Cheddar Cheese (2 cups).

On top of the cheese place 3 oz of Rotisserie Chicken (12 oz).

Top the shredded chicken with1 tsp Honey Mustard (1/4 cup), two thin slices of Tomatoes (to taste), and Lettuce (to taste), followed by a thin layer of Onions (to taste) if desired.

Top with another 1/4 cup of cheese and place the top sandwich bread.

Heat a grill pan over medium heat and add 2 Tbsp of Unsalted Butter (1/2 cup).

Once hot, place the sandwich on and press down. Cook for about 3-4 minutes or until golden brown and flip.

Cook for another 3-4 minutes and press down with a metal spatula. Once both sides are done, take out and cut on a bias.
