Cheddar is a cow’s milk cheese that has a taste which can range from mild to sharp depending on how long it has aged.

Mild cheddars will be aged for about two to three months. Sharper-tasting cheddars are aged for about a year. Extra sharp cheddar cheese should be aged for at least eighteen months. Premium cheddar is the strongest tasting version and can be aged anywhere from two to five years!

If you want to freeze your cheddar, cut it into small ½ pound bits and wrap in airtight packaging. When you want to defrost it, thaw it in the refrigerator.
