Step 1
Bring a large pot of water to a boil, carefully place add the

Step 3
In a food processor, add the yolks,

Dijon Mustard (1 Tbsp)

Salt (1 tsp)
. Blend until the filling is smooth.
Step 4
Using a piping bag or a spoon, fill the egg whites with the avocado and yolk mixture. Top with more bacon pieces, and garnish with a sprinkle of
Fresh Cilantro (to taste)
and
Cayenne Pepper (to taste)
