Step 1
Bring a large pot of water to a boil.
Step 2
Meanwhile, in a small bowl soak the
Breadcrumbs (1/2 cup)
in water for 1 minute.
Step 3
Squeeze out as much water as possible and add the bread to the
80/20 Lean Ground Beef (1 lb)
. Add ½ the
Parmesan Cheese (1/2 cup)
and season with
Salt (to taste)
and
Ground Black Pepper (to taste)
.
Step 4
Add
Fresh Parsley (2 Tbsp)
, mix everything together and form the meat into quarter-sized balls.
Step 5
Cook
Spaghetti (1 box)
according to package directions.
Step 6
In a large skillet, slowly cook meatballs in
Extra-Virgin Olive Oil (1 Tbsp)
for 3-4 minutes or until browned.
Step 7
Add the
Beef Broth (1 cup)
to the meatballs and reduce to medium heat.
Step 8
Season with
Salt (to taste)
and
Ground Black Pepper (to taste)
and simmer for 2 minutes.
Step 9
Drain and toss the pasta with
Basil Pesto (1 jar)
, meatballs, and remaining
Parmesan Cheese (1/2 cup)
.
