Preheat the oven to 400 degrees F (200 degrees C). Coat a baking dish with Nonstick Cooking Spray (to taste). Set aside.

Heat Olive Oil (2 Tbsp) in a skillet over medium heat. Once hot, add Chorizo (2 pckg) and brown for about 3 minutes. Transfer to a dish and set aside.

In the same skillet over medium-high heat, add Yellow Onion (1) and keep stirring until soft, about 4 minutes.

Add Garlic (4 cloves), Ground Cumin (1 tsp), and Paprika (1 tsp) and stir for another minute.

Pour in Diced Tomatoes (1 can). Keep stirring for about 7 minutes or until the liquid is slightly reduced.

Add Black Beans (3 cans) and stir for another minute. Remove from heat and transfer to the prepared baking dish.

Sprinkle the casserole evenly with Shredded Mexican Cheese Blend (1 1/2 cups) and top with Jalapeño Peppers (4 Tbsp). Bake for 20 minutes or until lightly browned.
