Step 1
Preheat the oven to 400 degrees F (200 degrees C). Coat a baking dish with
Nonstick Cooking Spray (as needed)
. Set aside.
Step 2
Heat
Olive Oil (2 Tbsp)
in a skillet over medium heat. Once hot, add
Chorizo (2 pckg)
and brown for about 3 minutes. Transfer to a dish and set aside.
Step 3
In the same skillet over medium-high heat, add
Yellow Onion (1)
and keep stirring until soft, about 4 minutes.
Step 4
Add
Garlic (4 cloves)
,
Ground Cumin (1 tsp)
, and
Paprika (1 tsp)
and stir for another minute.
Step 5
Pour in
Diced Tomatoes (1 can)
. Keep stirring for about 7 minutes or until the liquid is slightly reduced.
Step 6
Add
Black Beans (3 cans)
and stir for another minute. Remove from heat and transfer to the prepared baking dish.
Step 7
Sprinkle the casserole evenly with
Shredded Mexican Cheese Blend (1 1/2 cups)
and top with
Jalapeño Peppers (1/4 cup)
. Bake for 20 minutes or until lightly browned.
Step 8
Optionally, garnish with
Scallions (to taste)
and serve with
Tortilla Chips (to taste)
