Step 1
In a medium mixing bowl, combine the
Dark Brown Sugar (1/2 cup)
,
Fish Sauce (2 Tbsp)
,
Rice Vinegar (1/4 cup)
,
Garlic (1 clove)
,
Ground Ginger (1/2 Tbsp)
, and
Coarse Black Pepper (1 Tbsp)
. Set aside.
Step 2
In a frying pan, heat
Vegetable Oil (3 Tbsp)
over medium-high heat. Add
Yellow Onion (1)
and cook until softened, about 3 minutes.
Step 3
Add the
Boneless, Skinless Chicken Thighs (1.5 lb)
and cook for about 5 minutes until lightly charred.
Step 4
Add the sauce mixture and turn the heat to high, bring to a simmer until the chicken is cooked through and the sauce has thickened; about 10-15 minutes. Stir occasionally.
Step 5
Transfer to a serving plate. Optionally garnish with
Fresh Cilantro (to taste)
. Serve warm with
White Rice (to taste)
if desired.
