Fusilli Tuna Salad

Canned Tuna in Water

Fusilli Pasta

2 cups

Cherry Tomatoes

Sliced Black Olives

Small Red Onion , thinly sliced

Cucumbers

Lemons , zested, juiced

Olive Oil

Chopped Fresh Parsley

Cooking Instructions

In a large stockpot of water, add Fusilli Pasta (2 2/3 cups) and Salt (to taste) . Bring to a boil and cook until al dente according to the package instructions. Drain and set aside.

In a large mixing bowl, whisk Olive Oil (1/2 cup) , Lemon Zest (3) , and 1/2 cup of lemon juice. Season with Salt (to taste) and Ground Black Pepper (to taste) .

Mix in pasta, Canned Tuna in Water (1 3/4 cups) , Cherry Tomatoes (2 cups) , Sliced Black Olives (1/2 cup) , Red Onion (1/2) , Cucumbers (2 cups) , and Fresh Parsley (4 Tbsp) . Stir to combine.

Transfer to a serving plate. Serve immediately.
