Remove the pit from the Avocado (2), then remove the flesh from the skin.
Juice the Lime (2). You will need 1/4 cup of juice.
Chop the Fresh Cilantro (1/2 cup).
Place the avocado, Extra-Virgin Olive Oil (1/2 cup), 1/2 cup of lime juice, Chili Paste (1 tablespoon), Garlic Paste (1 teaspoon), and Kosher Salt (to taste).
Add chopped cilantro to the bowl, mash all ingredients coarsely together, check and adjust seasonings to taste.
Store in a jar. Serve on top of toasted bread, with pasta, as a salad topping, or as a condiment for eggs, meat, seafood etc. Enjoy!
