Cooking Instructions

Step 1
Preheat oven to 350 degrees F (180 degrees C).
Step 2
In a medium bowl toss together Baby Potatoes (12) , Olive Oil (1 tsp) , and a sprinkle of Salt (to taste) and Ground Black Pepper (to taste) .
Step 3
Spread out evenly on a baking tray and bake for 25-30 minutes, turning once, until just tender.
Step 4
Combine together Mayonnaise (1/2 cup) , Parmesan Cheese (1/4 cup) , Capers (2 Tbsp) , Fresh Dill (1 Tbsp) , the juice from Lemon (1) , and Ground Black Pepper (to taste) .
Step 5
Remove potatoes from oven and gently flatten each with a flat surfaced utensil to a third of its original height.
Step 6
Set oven rack to 7-inch from broiler and turn oven to broil. Spread 1 tbsp of paste onto each potato. Broil for 2-3 minutes until golden and bubbly.
Step 7
Remove from oven and serve immediately, garnishing with fresh dill if desired.
