Begin with preparing all the ingredients, chop the jalapeños peppers and shred the cheeses if not using packed shredded cheese. You can mix everything together in a mixing bowl then transfer it to the skillet pan. Sprinkle some more shredded cheese or Mexican blend and some fresh jalapeño slices on top. You can cook it in the grill or smoker or even in an oven just until the cheese is bubbly and starts to create a brown cheese crust top.

Step 1
Preheat smoker or grill for indirect cooking at 350 degrees F (180 degrees C).
Step 2
Dice the Jalapeño Peppers (3) .
Step 3
Shred the Pepper Jack Cheese (2 cups) if not using pre-shredded.
Step 4
Shred the Sharp Cheddar Cheese (2 cups) if not using pre-shredded.
Step 5
Combine Cream Cheese (1 cup) , shredded pepper jack, shredded sharp cheddar, Mayonnaise (1/3 cup) , Canned Mild Diced Green Chiles (1/2 cup) , diced jalapeños, All-Purpose Spice Rub (1/2 Tbsp) and Mexican Seasoning (1/2 Tbsp) in a large bowl and place in a cast iron skillet.
Step 6
Top with Shredded Mexican Cheese Blend (1/4 cup) and Jalapeño Pepper Slices (to taste) .
Step 7
Place iron skillet on grill grate and cook until cheese hot and bubbly and the top has browned slightly about 25 minutes.
Step 8
Serve warm with large corn chips (scoops), tortilla chips, or your favorite vegetables for dipping. Enjoy!
