Preheat smoker or grill for indirect cooking at 350 degrees F (180 degrees C).

Dice the Jalapeño Peppers (3).

Shred the Pepper Jack Cheese (2 cups) if not using pre-shredded.

Shred the Sharp Cheddar Cheese (2 cups) if not using pre-shredded.

Combine Cream Cheese (1 cup), shredded pepper jack, shredded sharp cheddar, Mayonnaise (1/3 cup), Canned Mild Diced Green Chiles (1/2 cup), diced jalapeños, All-Purpose Spice Rub (1/2 Tbsp) and Mexican Seasoning (1/2 Tbsp) in a large bowl and place in a cast iron skillet.
step 5 Combine Cream Cheese (1 cup), shredded pepper jack, shredded sharp cheddar, Mayonnaise (1/3 cup), Canned Mild Diced Green Chiles (1/2 cup), diced jalapeños, All-Purpose Spice Rub (1/2 Tbsp) and Mexican Seasoning (1/2 Tbsp) in a large bowl and place in a cast iron skillet.
