Colombian hot chocolate is a drink that you can have for breakfast or an evening snack. It’s basically hot chocolate with cheese! Yes, cheese! An interesting combination of contrasting flavors, mild cheeses like mozzarella give a slightly salty taste to the sweet hot chocolate. Tasting that melty cheese along with hot chocolate is such an amazing experience you can’t imagine without trying it out.

85% Dark Chocolate
In a medium pot, heat
Whole Milk (3 1/2 cups)
over medium heat until warm. Stir constantly.
85% Dark Chocolate (2/3 cup)
and keep stirring until the chocolate is melted and combined with milk.
Granulated Sugar (1/2 cup)
and stir until dissolved.
Add 1 oz of
Mozzarella Cheese (1 cup)
to each mug.
Evenly pour the hot chocolate mixture into each mug. Let the cheese melt for a bit before serving with a spoon.
Makes 2-4 servings.
Make sure to adjust the sweetness according to your preference. This will depend on the sweetness of the chocolate you are using.
