Step 1
In a large mixing bowl, add
Sprite (1 can)
,
Soy Sauce (1/2 cup)
,
Garlic (6 cloves)
, and
Ground Black Pepper (1/2 tsp)
. Mix until well combined. Then add
Boneless, Skin-On Chicken Thighs (2 lb)
and toss to coat. Cover with plastic wrap and marinate for at least 30 minutes or even better overnight in the fridge.
Step 2
In a saucepan, add
Crunchy Peanut Butter (1/3 cup)
,
Soy Sauce (1/2 cup)
,
Water (1/4 cup)
, and
Granulated Sugar (1/4 cup)
. Turn the heat to medium and cook the sauce for about 5 minutes until thickened but still runny. Stir occasionally to prevent the sauce from sticking at the bottom. Once the sauce is done, set it aside.
Step 3
Heat a grill pan or cast iron skillet over medium-high heat, once hot, place on the chicken skin side down. Grill for 5-8 minutes on each side. Repeat with the other batches if needed.
Step 4
Serve the chicken with peanut sauce,
White Rice (to taste)
, and
Pickled Red Onions (to taste)
. Optionally, garnish with
Scallions (to taste)
