Author's Notes

Green beans can be cooked and cooled in an ice bath up to one day in advance. They will need more time to warm in the butter sauce if added from a chilled state.

Heat a large pot of lightly salted water to a boil. Add Green Beans (6 cups) and cook at a gentle simmer until just tender, about 8 minutes. Drain well.

Meanwhile, melt the Unsalted Butter (1/4 cup) in a medium skillet.

Add Garlic (3 cloves) and Crushed Red Pepper Flakes (1/4 tsp) and sauté on low heat until fragrant and slightly softened, about 1 minute, being careful not to brown.

Whisk in Lemon (1/2), Dijon Mustard (1/2 Tbsp), Salt (1/4 tsp), and Ground Black Pepper (to taste).
