You can save the oil from garlic confit to cook other dishes.

Preheat the oven to 250 degrees F (120 degrees C).

Add Garlic (30 cloves) and Fresh Thyme (10 sprigs) to a shallow baking dish. Pour the Olive Oil (1 1/4 cups) over to cover the garlic. Bring to the preheated oven and bake for about 45-60 minutes or until the garlic is very tender.

To make garlic chips, heat the oil in the pan over medium-high heat. Once hot, add thinly sliced Garlic (10 cloves) and cook until golden brown. Remove from the pan and set aside until ready to serve.

When the garlic confit is almost ready, start to prepare the pasta. Bring a pot with Water (6 cups) to boil. Add generous amounts of Salt (to taste). Add Spaghetti (12 oz) and cook according to the package instructions but make sure to scoop the pasta out about 2 minutes earlier.

Remove garlic confit from the oven and transfer the garlic cloves with around 3 Tbsp of oil to a skillet that is used for garlic chips over medium heat. Press down to mash the garlic and keep stirring for about a minute.

Add 1 tsp of Lemon (1), 1 Tbsp of Lemon Juice, thyme leaves, Salt (to taste), and Ground Black Pepper (to taste). Stir to combine. Then add pasta, and ¼ cup of pasta water and stir to combine. You can add more pasta water if needed.

Serve on the plate. Garnish with garlic chips and some more lemon zest.
