Step 1
Peel the skins off the Potatoes (3) .
Step 2
Thinly slice the potatoes into strips.
Step 3
Soak the sliced potatoes in cold water for 2 minutes.
Step 4
Slice the Dried Chili Peppers (3) in half lengthwise. Take the skin off the Garlic (3 cloves) .
Step 5
In a wok or pan under high heat, heat up the Oil (2 Tbsp) until almost smoking. While the oil is heating up, drain the potatoes.
Step 6
Add the peeled garlic and halved chili peppers. After a few seconds, add in the drained potatoes. Stir fry until the potatoes are almost translucent but not completely soft.
Step 7
Add the Distilled White Vinegar (1 1/2 Tbsp) and Salt (1/8 tsp) . Taste for seasoning and continue to stir fry for 1 minute.
Step 8
Transfer to a plate and serve immediately.
