Makes 2-4 portions.

Rinsing the red onions removes most of the harsh kick from the onion and leaves behind the natural sweetness of the onion.

Cooking Instructions

First, make the sour cream smear. In a small bowl, combine the Sour Cream (3/4 cup), Honey (1 tsp), 1 Tbsp of Lemon Zest (1), 1 1/2 Tbsp of Lemon Juice, Crushed Red Pepper Flakes (1/4 tsp), and Salt (1/4 tsp). Mix well until all the ingredients are thoroughly combined. Adjust the seasoning to taste. Set aside

Season the Rainbow Cherry Tomatoes (3 cups) and Cucumber (1). In a mixing bowl, toss the cherry tomatoes, cucumber, Balsamic Vinegar (to taste), Extra-Virgin Olive Oil (to taste), Sea Salt Flakes (to taste), and Ground Black Pepper (to taste). Set aside.

Now assemble the salad. On a platter or serving plate, dollop and smear the sour cream to form a base. With a slotted spoon, spoon the tomato and cucumber mixture on top, leaving the liquid behind.

Sprinkle the Red Onion (1/4) and Fresh Basil (2 Tbsp) over the top. Drizzle with Extra-Virgin Olive Oil (to taste) and a sprinkle of Sea Salt Flakes (to taste).
