Step 1
First, make the sour cream smear. In a small bowl, combine the
Sour Cream (3/4 cup)

Honey (1 tsp)
, 1 Tbsp of
Lemon Zest (1)
, 1 1/2 Tbsp of Lemon Juice,
Crushed Red Pepper Flakes (1/4 tsp)
, and
Salt (1/4 tsp)
. Mix well until all the ingredients are thoroughly combined. Adjust the seasoning to taste. Set aside
Step 2
Season the
Rainbow Cherry Tomatoes (3 cups)
and
Cucumber (1)
. In a mixing bowl, toss the cherry tomatoes, cucumber,
Balsamic Vinegar (to taste)
,
Extra-Virgin Olive Oil (to taste)
,
Sea Salt Flakes (to taste)
, and
Ground Black Pepper (to taste)
. Set aside.
Step 3
Now assemble the salad. On a platter or serving plate, dollop and smear the sour cream to form a base. With a slotted spoon, spoon the tomato and cucumber mixture on top, leaving the liquid behind.
Step 4
Sprinkle the
Red Onion (1/4)
and
Fresh Basil (2 Tbsp)
over the top. Drizzle with
Extra-Virgin Olive Oil (to taste)
and a sprinkle of
Sea Salt Flakes (to taste)
.
Step 5
Serve with a crusty
Baguette (1)
for bruschetta.
