Preheat oven to 350 degrees F (175 degrees C).
Season the Cowboy Steak (3 pound) with Salt (to taste) and Freshly Ground Black Pepper (to taste). Sear oven safe skillet with a mix of Butter (to taste) and Olive Oil (to taste). The butter gives the flavor, and the oilve oil raises the smoke point of the butter so it doesn't burn.
Mix Merlot (1 cup), Beef Broth (1 cup), Worcestershire Sauce (1 cup), Granulated Garlic (1 tablespoon), Granulated Onion (1 tablespoon), Dried Oregano (1 tablespoon), Dried Basil (1 tablespoon) and Montreal Steak Seasoning (2 tablespoon) for braising.
Pour mixture over meat then add veggies.
Cover skillet and bake in the preheated oven for 2 1/2 hours.
Let the steak rest 15 minutes before serving.
