Author's Notes

You can start roasting the sweet potatoes while roasting your turkey in the oven during Thanksgiving. Just pull them out at the right time and continue the recipe!

We choose to roast the potatoes instead of boiling them as reducing the moisture contact avoids a water-logged potato. Alternatively, you can steam the sweet potatoes instead. Just remember to pat them dry before adding the dairy mixture.

Keeping the skin on for your spuds is an easy way to include more nutrition and fiber. Additionally, they add a nice crunch in textual contrast!

Cooking Instructions

Step 1
Preheat your oven to 350 degrees F (180 degrees C).
Step 2
Drizzle Olive Oil (3 Tbsp) , Salt (to taste) , and Ground Black Pepper (to taste) on your Sweet Potatoes (4) on a lined baking tray with parchment paper and place into the oven once preheated. Bake for 20 minutes or until the potatoes are fork-tender.
Step 3
While the sweet potatoes are baking, prepare the dairy mixture. In a saucepan, add the Whole Milk (1 cup) , Unsalted Butter (1/3 cup) , and Whole Nutmeg (1/2 tsp) and season with Salt (to taste) and Ground Black Pepper (to taste) . Taste and check for seasoning. Bring up to a simmer but do not allow the mixture to boil. Set aside.
Step 4
When the potatoes are done, mash them with a potato masher and add in the dairy mixture. Then, using a spatula, mix and combine until a velvety texture is achieved. Add more milk or butter to adjust the consistency as needed.
Step 5
Transfer into a serving dish and garnish with reserved Unsalted Butter (2 Tbsp) and garnish with Whole Coriander Seeds (1/2 tsp) for a zingy and crispy contrast.
