Step 1
Preheat your oven to 350 degrees F (180 degrees C).

Drizzle
Olive Oil (3 Tbsp)

Salt (to taste)
, and
Ground Black Pepper (to taste)
on your
Sweet Potatoes (4)
on a lined baking tray with parchment paper and place into the oven once preheated. Bake for 20 minutes or until the potatoes are fork-tender.
Step 3
While the sweet potatoes are baking, prepare the dairy mixture. In a saucepan, add the
Whole Milk (1 cup)
,
Unsalted Butter (1/3 cup)
, and
Whole Nutmeg (1/2 tsp)
and season with
Salt (to taste)
and
Ground Black Pepper (to taste)
. Taste and check for seasoning. Bring up to a simmer but do not allow the mixture to boil. Set aside.
Step 4
When the potatoes are done, mash them with a potato masher and add in the dairy mixture. Then, using a spatula, mix and combine until a velvety texture is achieved. Add more milk or butter to adjust the consistency as needed.
Step 5
Transfer into a serving dish and garnish with reserved
Unsalted Butter (2 Tbsp)
and garnish with
Whole Coriander Seeds (1/2 tsp)
for a zingy and crispy contrast.
