Boiling dough in baking soda water before baking creates the iconic pretzel texture and flavor through the Maillard reaction, giving a golden-brown color and enhancing the taste.

Feel free to change the combination of cheese and beer in the recipe. A few examples are;
Smoky Gouda and Stout: Swap Cheddar for smoky Gouda and use stout beer for a robust twist.
Pepper Jack and Pale Ale: Choose Pepper Jack and pale ale for a zesty, spicy kick.
Fontina and Wheat Beer: Opt for creamy Fontina and Wheat Beer for a milder flavor.

Preheat your oven to 350 degrees F (180 degrees C).

Begin by shaping the Pillsbury Grands!™ Southern Style Biscuits (2 cans) into 16 equal-sized dough balls. Allow them to rest for 10 minutes.

While the dough balls are resting, prepare the beer cheese dip. In a mixing bowl, combine the Cream Cheese (1 block), Shredded Cheddar Cheese (1 1/2 cups), Shredded Mozzarella Cheese (1 cup), Dijon Mustard (1 Tbsp), Fresh Chives (2 Tbsp), Garlic Powder (2 tsp), Crushed Red Pepper Flakes (1 tsp), Freshly Ground Black Pepper (1 tsp), and Ale Beer (1/2 cup). Mix until well combined.

In a separate pot, bring 4 cups of Water (4 cups) to a boil and then add the Baking Soda (3 Tbsp).

Dip the dough balls into the boiling water with baking soda and let them cook until they float, which should take about 1 minute.

Prepare a safe baking pan (such as a cast iron pan) by lining it with unsalted butter. Transfer the boiled dough balls to the pan and arrange them in a ring formation. Using a sharp knife, slash an "x" shape on each dough ball.

Pour the prepared beer cheese dip into the center of the dough ring, and then sprinkle additional grated cheese on top of the dip.

Brush the dough balls with Unsalted Butter (3 Tbsp) and then sprinkle them with Pretzel Salt (to taste).

Cover with foil and place the pan in the preheated oven and bake for approximately 20 minutes, or until the pretzel balls are puffy.

Remove the foil and bake for an additional 15 minutes or until the pretzel balls are golden brown and the cheese is bubbly.

Once out of the oven, garnish the dish with pretzel salt, chopped chives, and additional chili flakes.
