Author's Notes

Serves 2-4. We are roasting half of the ingredients to give a textual and flavor contrast to their fresh counterparts. Feel free to omit the air fryer step. The results will yield a more homogeneous salad.

Preheat an air fryer to 350 degrees F (180 degrees C).

In the air fryer basket, place half of the Cherry Tomato (1/2 cup), half of the Canned Black Eyed Peas (1 1/4 cups) and half of the Shallots (1 1/2).

Spray with Nonstick Cooking Spray (as needed) and season with Salt (to taste) and Ground Black Pepper (to taste).

Place into the air fryer for 10 minutes. Remove basket and toss halfway through.

In a bowl, whisk together the Olive Oil (1/3 cup), Apple Cider Vinegar (2 Tbsp), Yellow Mustard (2 tsp), Hot Sauce (1 Tbsp), Honey (1 tsp), and Garlic (1 clove)—with Salt (to taste) and Ground Black Pepper (to taste). Set aside.

In a large mixing bowl, combine the remaining Canned Black Eyed Peas (1 1/4 cups), Cherry Tomato (1/2 cup), Shallots (1 1/2), cut Mini Cucumber (1), and most of the Dill Pickles (4 Tbsp) (reserve 1 Tbsp for garnish).

Drizzle the prepared hot vinaigrette over the salad ingredients.

Add the roasted vegetables and toss everything together until well coated with the vinaigrette.

Transfer the salad to a serving plate. Garnish with the reserved dill.
