Author's Notes

Serves 2-4. We are roasting half of the ingredients to give a textual and flavor contrast to their fresh counterparts. Feel free to omit the air fryer step. The results will yield a more homogeneous salad.

Cooking Instructions

Preheat an air fryer to 350 degrees F (180 degrees C).

In the air fryer basket, place half of the Cherry Tomato (1/2 cup), half of the Canned Black Eyed Peas (1 1/4 cups) and half of the Shallots (1 1/2).

Spray with Nonstick Cooking Spray (as needed) and season with Salt (to taste) and Simply Organic® Black Pepper (to taste).

Place into the air fryer for 10 minutes. Remove basket and toss halfway through.

In a bowl, whisk together the Olive Oil (1/3 cup), Apple Cider Vinegar (2 Tbsp), Yellow Mustard (1 tsp), Hot Sauce (1 Tbsp), Honey (1 tsp), and Garlic (1 clove)—with Salt (to taste) and Simply Organic® Black Pepper (to taste). Set aside.

In a large mixing bowl, combine the remaining Canned Black Eyed Peas (1 1/4 cups), Cherry Tomato (1/2 cup), Shallots (1 1/2), cut Mini Cucumber (1), and most of the Dill Pickles (4 Tbsp) (reserve 1 Tbsp for garnish).

Drizzle the prepared hot vinaigrette over the salad ingredients.

Add the roasted vegetables and toss everything together until well coated with the vinaigrette.

Transfer the salad to a serving plate. Garnish with the reserved dill.
