Place the Rotisserie Chicken (1) in the fridge to firm up. Shred the chicken.
In a small bowl add the Miracle Whip (1 cup), Granulated Sugar (1 tablespoon), Lemon (1/2), Salt (1/4 teaspoon), Ground Black Pepper (1/2 teaspoon) and Dijon Mustard (1 teaspoon). Mix well, add the Fresh Parsley (2 tablespoon) and continue to mix well.
In a large bowl add the shredded chicken, Apple (1), Mango (1), Celery (2 stalk) and Red Onion (1/2). Mix thoroughly with your hands. Add the sauce and mix well.
Place in the fridge to chill. Serve on bread, in lettuce wraps or with crackers.
