Step 1
Preheat the convection oven to 375 degrees F (190 degrees C). Combine Butter (4 tablespoon) and Brown Sugar (1/4 cup) into a large mixing bowl and mix until combined.
Step 2
Combine Vanilla Extract (1/2 teaspoon) and Egg (1) into the mixing bowl
Step 3
In a separate container, stir together the Almond Meal (1 1/4 cup), Sea Salt (1/4 teaspoon), Baking Powder (1/2 teaspoon). Combine the dry mixture into the large mixing bowl.
Step 4
Combine Old Fashioned Rolled Oats (3/4 cup) into the large mixing bowl. Make sure to chop the chopped Dark Chocolate Chips (1/4 cup) and chopped Walnut (1/2 cup) into 1/4" pieces.
Step 5
Combine chopped walnut pieces and dark chocolate chips into the mixing bowl. Stir until all ingredients are well combined.
Step 6
Shape the dough to 1 inch balls, place on baking sheet 1 1/2" a part. Press down slightly to flatten dough balls. Bake for 7-10 minutes. Remove from oven and put cookies on to a cooling tray.
