Step 1
In a sauce pan bring
Apple Juice (3 cups)
up to a boil over medium heat.
Step 2
Add the
Guava (12)
into the sauce pan.

Add
Brown Sugar (1/4 cup)

Cinnamon Stick (1)

Whole Cloves (3)
and
Lime (1)
. Once it comes up to a boil bring it down to a simmer.
Step 4
In another deep saucepan over medium heat, add
Olive Oil (1 Tbsp)
,
Vidalia Onion (1/2)
,
Scallions (1 bunch)
,
Garlic (2 cloves)
,
Fresh Thyme (6 sprigs)
,
Hot Smoked Paprika (1 tsp)
, and
Ground Black Pepper (1/4 tsp)
. Give it a stir.
Step 5
Next add in the
Tomato Paste (2 Tbsp)
and stir for 30 seconds Add the
Apple Cider Vinegar (1/2 cup)
,
Salt (3/4 tsp)
,
Worcestershire Sauce (1 Tbsp)
,
Chili Sauce (1 1/4 cups)
,
Molasses (2 Tbsp)
, and
Apple Juice (1/2 cup)
then bring it to a boil. Continuously stir and lower the heat.
Step 6
Turn off the heat on the guava pot and using a potato masher, lightly crush the guavas.
Step 7
Strain the liquid of the guava pot and take a few whole seedless pieces of guava and add into the liquid.
Step 8
Add the guava syrup and pieces into the other sauce pot, bring up to a boil then lower to a simmer for 35 minutes.
Step 9
Turn off the heat. Using a stick blender, blend everything together. Taste and adjust for seasoning. Allow it to cool before using. Enjoy!
