In a sauce pan bring Apple Juice (3 cups) up to a boil over medium heat.

Add the Guava (12) into the sauce pan.

Add Brown Sugar (1/4 cup), Cinnamon Stick (1), Whole Cloves (3) and Lime (1). Once it comes up to a boil bring it down to a simmer.

In another deep saucepan over medium heat, add Olive Oil (1 Tbsp), Vidalia Onion (1/2), Scallion (1 bunch), Garlic (2 cloves), Fresh Thyme (6 sprigs), Hot Smoked Paprika (1 tsp), and Ground Black Pepper (1/4 tsp). Give it a stir.

Next add in the Tomato Paste (2 Tbsp) and stir for 30 seconds Add the Apple Cider Vinegar (1/2 cup), Salt (3/4 tsp), Worcestershire Sauce (1 Tbsp), Chili Sauce (1 1/4 cups), Molasses (2 Tbsp), and Apple Juice (1/2 cup) then bring it to a boil. Continuously stir and lower the heat.

Turn off the heat on the guava pot and using a potato masher, lightly crush the guavas.

Strain the liquid of the guava pot and take a few whole seedless pieces of guava and add into the liquid.

Add the guava syrup and pieces into the other sauce pot, bring up to a boil then lower to a simmer for 35 minutes.

Turn off the heat. Using a stick blender, blend everything together. Taste and adjust for seasoning. Allow it to cool before using. Enjoy!
