Cooking Instructions

First, rinse and drain the
Quinoa (1/2 cup)
to wash away the bitter outer shell. Use
Chicken Stock (1 cup)
to either cook it on the stovetop or in a rice cooker.

In a pan, melt the
Unsalted Butter (1 Tbsp)
, low and slow.
3.
Whisk in the
Unbleached All Purpose Flour (1 Tbsp)
for 1-2 minutes to draw out the raw flour taste.

Slowly pour in the
Milk (1 cup)
. Bump up the heat to medium and whisk constantly to prevent lumps. As it cooks, it will thicken.

Stir in
Aged Cheddar Cheese (1 cup)
.
6.
Add
Broccoli (1 cup)
.
7.
Add cooked quinoa. And mix well.
8.
Transfer to a casserole dish, cover with more cheese.
9.
Then cover with foil and bake at 350 degrees F (180 degrees C) for 20-30 minutes or until cheese is melted.
