Step 1
In a small bowl, mix All-Purpose Flour (3/4 cup) , Corn Starch (2 Tbsp) , Baking Powder (1/4 tsp) , Baking Soda (1/4 tsp) , Salt (1/4 tsp) and Water (3/4 cup) until smooth.
Step 2
Heat Peanut Oil (as needed) in pot to 375 degrees F (180 degrees C). Place about four Fish Fillets (1 lb) at a time into the batter, coating them completely.
