Preheat oven to 350 degrees F (180 degrees C) and grease a 12-count muffin tin with nonstick spray.

In a large bowl, whisk together the Quick Cooking Oats (3 cups), Simply Organic Cinnamon, Ground (1/2 tsp), Baking Powder (1 tsp), and Salt (1/2 tsp).

Add in the Farmhouse Eggs® Large Brown Eggs (2), Whole Milk (1 1/2 cups), Honey (4 Tbsp), Vanilla Extract (1 tsp), Bananas (2), and combine.

Divide the batter into 3 bowls and add in desired mix-ins such as chocolate chips, apples, raspberries, etc.

Fill greased muffin tin wells with batter. Top muffins with additional mix-ins if desired.

Bake for 25-30 minutes or until muffins are golden-brown, and springy. A tester inserted into the center of the muffin should be clean when removed.
