Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
Roll cherry-size pieces of Pizza Dough (16 ounce), about 1/2-ounce each, into balls.
Add Baking Soda (1/3 cup) to the water in a small pot and bring to a boil. Drop the balls into the boiling Water (5 cup). Cook for 1 minute or until slightly puffed.
With a slotted spoon, remove the balls from the water and place them on paper toweling. Transfer them to the prepared baking sheet, spaced about 1/2-inch apart.
Beat the Large Egg (1) and brush the tops with it, then sprinkle with the Coarse Salt (to taste). Bake for 12 to 15 minutes or until golden.
Transfer to a serving dish and garnish with Scallion (to taste), if desired. Serve with your favorite Whole Grain Mustard (to taste) or some cheese dip.
