Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Thaw the Puff Pastry (1 pckg) . Then, on a work surface sprinkled with Granulated Sugar (1/2 cup) place both pastry sheets.
Step 3
Sprinkle with remaining Granulated Sugar (1/2 cup) . Using a rolling pin, roll the pastry sheets into 12-inch squares.
Step 4
Spread the Just Jan’s® Pomegranate Fruit Spread (3/4 cup) evenly over the top of the pastry sheets.
Step 5
Working with one sheet at a time, roll up one edge to the middle of the sheet, then roll the parallel edge in the same manner until the rolls touch.
Step 6
Press gently to seal roll, then wrap tightly in plastic wrap. Chill until firm, about 30 minutes.
Step 7
Cut chilled pastry rolls with a sharp knife crosswise into 1/2-inch thick slices. Place 2-inches apart on an ungreased cookie sheet. Keep remaining pastry well chilled.
Step 8
Bake in batches for 3-4 minutes, or until the tops are golden brown. Using a spatula, turn, and continue baking for another 3-4 minutes.
Step 9
Transfer cookies to a rack to cool, serve, and enjoy!
