Honoring the famous BBQ only found in the Carolinas, these quesadillas are delicious, filling, and healthy for the whole family. I began buying Eggland’s Best eggs many years ago because I was trying to find ways to provide Omega-3’s in my children’s diet. In addition, I was controlling my high cholesterol through diet rather than medication. The additional vitamins provided a bonus for a healthy diet. Using Eggland’s Best eggs in recipes is a win-win-win!

step 1
Make the BBQ sauce in a medium saucepan by combining Apple Cider Vinegar (1 cup), Ketchup (3/4 cup), Honey Mustard (1 Tbsp), Hot Sauce (1 Tbsp), Brown Sugar (4 Tbsp), ½ tsp. Salt (1/2 tsp), and ½ tsp. Ground Black Pepper (1/2 tsp). Heat to a rapid simmer then reduce heat and simmer for about 15 minutes or until thickened. Stir occasionally.

Pour BBQ sauce over the chopped Pork (2 cups) and mix until pork is covered. Set aside.

Mix up the egg mixture by combining Eggland's Best Classic Eggs (12), Ricotta Cheese (1 cup), Fresh Chives (1 Tbsp), 1 tsp Salt (1 tsp), and 1 tsp. Ground Black Pepper (1 tsp). This can be done while the BBQ sauce is cooking.

In a fry pan with an 8-inch bottom, melt about ½ tbsp. Butter (3 Tbsp). Pour in ½ cup Eggland’s Best eggs and ricotta cheese mixture. Cook on medium heat until just set, about 1-2 minutes. Top with 1/3 cup BBQ meat and ½ cup of Shredded Mozzarella and Provolone Cheese Blend (3 cups). Lay one 8-Inch Flour Tortillas (6) on top and press down so it will stick to meat, cheese, and eggs. Flip over to brown the tortilla, about 30 seconds. Fold in half and serve.
