Preheat your oven to 300 °F (150 °C) and line a baking sheet with parchment paper.

For preparing the meringue base, in a clean, dry bowl, whisk the Eggland's Best Classic Eggs (3) whites with a pinch of Salt (1 pinch) until stiff peaks form.

Gradually add the Powdered Confectioners Sugar (2 1/2 cups) (reserve 2 tablespoons for later), continuing to whisk until the mixture is glossy and holds firm peaks.

Remove 4 tablespoons of the meringue mixture and set it aside in a small bowl for glazing later.

For the dough, gently fold the Almond Flour (3 1/3 cups), Cinnamon (2 tsp) and Vanilla Extract (1 tsp) into the remaining meringue until it forms a sticky dough. Avoid overmixing.

Place the dough between two sheets of parchment paper and roll it out to about ¼ inch (5-6mm) thickness.

Use a star-shaped cookie cutter (dip it in powdered sugar to prevent sticking) to cut out shapes.

Transfer the stars to the prepared baking sheet, leaving a little space between each one.

Using a small spoon or pastry brush, carefully spread the reserved meringue glaze over each star for a glossy finish.

Bake in the preheated oven for 15-18 minutes. The cookies should be firm on the outside but still slightly chewy inside. Keep an eye on them to avoid browning; they should remain white.
