1/4 cup Extra-Virgin Olive Oil
1 tablespoon Agave Syrup
1/2 tablespoon Dijon Mustard
2 pinch Sea Salt
2 pinch Freshly Ground Black Pepper
2 cup Fresh Spinach
10 Walnut

STEP 1
Into a mixing bowl, add Extra-Virgin Olive Oil (1/4 cup), Apple Cider Vinegar (1 tablespoon), Agave Syrup (1 tablespoon), Lemon Juice (1 teaspoon), Dijon Mustard (1/2 tablespoon), Garlic (1 clove), Sea Salt (1 pinch), and Freshly Ground Black Pepper (1 pinch). Whisk until well combined, then cover with plastic wrap and set aside.
STEP 2
Thinly slice Red Onion (1/2).
STEP 3
Core Red Apple (1) and cut into 1/2-inch thick cubes. Drizzle the apples with lemon juice to prevent browning.
STEP 4
Cut Manchego Cheese (4 ounce) into 1/8-inch cubes.
STEP 5
Finely chop Pitted Dates (3).
STEP 6
Into a serving bowl, add Fresh Spinach (2 cup), red onion, apples, cheese, and dates.
STEP 7
Break apart Walnut (10) over the salad, then season everything with Sea Salt (1 pinch) and Freshly Ground Black Pepper (1 pinch).
STEP 8
Top off the salad with the apple cider vinaigrette. Serve and enjoy!
