Preheat mini waffle maker.

In a bowl, mix together Eggland’s Best Pasture Raised Eggs (4) with Mixed Vegetables (1 cup) and Shredded Cheddar Cheese (3/4 cup).

Brush waffle maker with Olive Oil (as needed) and pour 1/4 cup egg mixture into the mini waffle maker, close the lid, and cook for 3 minutes, until golden.
