Step 1
Preheat oven to 375 degrees F (190 degrees C).
Step 2
Thinly slice the
Yukon Gold Potatoes (6 cups)
.
Step 3
Whisk together
Olive Oil (3 Tbsp)
and
Chipotle Peppers in Adobo Sauce (1 tsp)
.
Step 4
Brush the bottom and sides of a small baking dish with 1/3 of the oil mixture.
Step 5
Place potatoes standing up in a baking pan. You want the potatoes to be as tightly packed as possible.
Step 6
Brush tops of potatoes with remaining oil mixture. Sprinkle with
Salt (to taste)
and
Ground Black Pepper (to taste)
.
Step 7
Bake for 75 to 90 minutes or until tops of potatoes are browned and crispy. Serve warm and enjoy!
