Into a bowl, add Eggland's Best Classic Eggs (2), Heavy Cream (2 Tbsp), Salt (1/4 tsp), and Ground Black Pepper (1/4 tsp). Beat together.

Into a pan, add Oil (1 Tbsp) and swirl around to coat the bottom. Once hot, add the egg mixture. Let cook for 1 minute over medium-high heat.

When egg is not so runny, add Shredded Mozzarella Cheese (to taste), Black Olives (to taste), and Scallions (to taste). Cook until cheese is almost melted.
step 4
Fold omelet in half. Cook for an additional 30 seconds.
step 5
Flip and cook for another 30 seconds.
step 6
Top with additional olives and scallion. Serve and enjoy!
