Into a bowl, add Egg (2), Heavy Cream (2 tablespoon), Salt (1/4 teaspoon), and Ground Black Pepper (1/4 teaspoon). Beat together.
Into a pan, add Oil (1 tablespoon) and swirl around to coat the bottom. Once hot, add the egg mixture. Let cook for 1 minute over medium-high heat.
When egg is not so runny, add Shredded Mozzarella Cheese (to taste), Black Olives (to taste), and Scallion (to taste). Cook until cheese is almost melted.
Fold omelet in half. Cook for an additional 30 seconds.
Flip and cook for another 30 seconds.
Top with additional olives and scallion. Serve and enjoy!
