Step 1
Into a bowl, add
Eggs (2)

Heavy Cream (2 Tbsp)
,
Salt (1/4 tsp)
, and
Ground Black Pepper (1/4 tsp)
. Beat together.
Step 2
Into a pan, add
Oil (1 Tbsp)
and swirl around to coat the bottom. Once hot, add the egg mixture. Let cook for 1 minute over medium-high heat.
Step 3
When egg is not so runny, add
Shredded Mozzarella Cheese (to taste)
,
Black Olives (to taste)
, and
Scallions (to taste)
. Cook until cheese is almost melted.
Step 4
Fold omelet in half. Cook for an additional 30 seconds.
Step 5
Flip and cook for another 30 seconds.
Step 6
Top with additional olives and scallion. Serve and enjoy!
