Into a saucepan over high heat, add
Canola Oil (1/2 cup)
. Once the oil is hot, add
All-Purpose Flour (1/2 cup)
a bit at a time, whisking as you go. Cook until mixture comes together into a dark brown roux, about 5 minutes.
Lower heat to medium. Add
Chicken Stock (1/2 cup)
Water (1 cup)
. Continue whisking, adding more water as needed, until the mixture comes together as a smooth gravy. Keep whisking until desired consistency is reached. Season with
Salt (to taste)
Ground Black Pepper (to taste)
