Into a saucepan over high heat, add Canola Oil (1/2 cup). Once the oil is hot, add All-Purpose Flour (1/2 cup) a bit at a time, whisking as you go. Cook until mixture comes together into a dark brown roux, about 5 minutes.
Lower heat to medium. Add Chicken Stock (1/2 cup) and Water (1 cup). Continue whisking, adding more water as needed, until mixture comes together as a smooth gravy. Keep whisking until desired consistency is reached. Season with Salt and Pepper (to taste) if desired.
Serve warm over anything you want!
