These beautiful Vanilla Bean Chocolate Bottom Sugar Cookies are almost as fun to look at as they are to eat! If you don't like pink, you can switch in any food coloring you like or just omit it.

Unsalted Butter , room temperature
1/2 Tbsp
Vanilla Bean Paste
6 dashes
Rose Pink Food Coloring
1 tsp
Baking Soda
1/2 tsp
to taste
Chocolate Buttons
to taste
Sparkling Sugar

Directions

Step 1
Into the bowl of a stand mixer fitted with a paddle attachment, add Unsalted Butter (1 cup) and Granulated Sugar (1 cup) . Cream together until smooth.
Step 2
Add Large Eggs (2) and Vanilla Bean Paste (1/2 Tbsp) . Mix to incorporate.
Step 3
Add Rose Pink Food Coloring (6 dashes) and mix well.
Step 4
Add All-Purpose Flour (3 cups) , Baking Soda (1 tsp) , and Salt (1/2 tsp) . Mix until just combined.
Step 5
Preheat oven to 350 degrees F (176 degrees C).
Step 6
Place dough in the refrigerator for 15-20 minutes to firm up.
Step 7
Form the dough into 15 small balls and place them on a baking sheet. Press Chocolate Buttons (to taste) into each. Sprinkle with Sparkling Sugar (to taste) .
Step 8
Bake for 8-10 minutes.
Step 9
Let cool, then serve and enjoy!
