Step 1
Preheat your oven to 400 degrees F (200 degrees C).
Step 2
Clean and trim off any extra skin and fat off the
Tyson® Chicken Legs (3 lb)
. Cut a few slashes in the skin.
Step 3
In a large bowl place
Orange Juice (3/4 cup)
,
Fresh Lemon Thyme Leaves (3 sprigs)
,
Olive Oil (1 1/2 Tbsp)
,
Fresh Parsley (2 Tbsp)
, juice of the
Lemon (1/2)
,
Honey (1 Tbsp)
,
Garlic (3 cloves)
,
Scallions (1 bunch)
,
Ground Allspice (1/2 tsp)
,
Fresh Ginger (1/2 tsp)
,
Salt (1/2 tsp)
, and
Freshly Ground Black Pepper (1/4 tsp)
.
Step 4
Give it a good mix, then pour it over the chicken. You may marinate for a couple hours or use right away.
Step 5
Massage the pieces of chicken with your hands to coat both sides, then drizzle on the remaining
Olive Oil (1 1/2 Tbsp)
over the chicken. Tuck in the
Lemon (1)
as well as the
Fresh Lemon Thyme Leaves (2 sprigs)
between the pieces of chicken on a roasting pan/sheet and place the
Cherry Tomatoes (to taste)
in-between as well.
Step 6
Depending on the size of your chicken pieces, it will take between 1 hour and 5 minutes and 1 hour and 20 minutes. For additional color, you may hit the broil setting the last 2-4 minutes. Serve warm with sides of choice!
