Preheat oven to 350 degrees F (180 degrees C) and line a muffin tin with liners.

Add Butter (4 Tbsp) and Granulated Sugar (1/2 cup) in a bowl and beat until the mixture is pale and fluffy.

Add Molasses (1/2 cup) and Eggland’s Best Pasture Raised Eggs (2) beat until the mixture is smooth.

In a bowl combine the Baking Soda (1 tsp) with Coffee (1/2 cup) and stir until the baking soda is dissolved, add this mixture into the eggs and molasses mixture.

Add the All-Purpose Flour (1 1/3 cups) and Gingerbread Spice (1 tsp), stir until ingredients are well combined.

Fill cupcake liners halfway. Bake the cupcakes on the middle rack at 350 degrees F for about 20 minutes, or until a toothpick comes out clean. (Cupcakes will be flat on top.) Transfer the cupcakes to a rack to cool completely before frosting.

Add Cream Cheese (1 cup), Butter (2 Tbsp), Powdered Confectioners Sugar (1 1/2 cups), and Simply Organic Vanilla Extract (1 tsp) into a bowl and beat until fluffy and smooth.
