Heat oven to 325°F (160°C). Spray nonstick 12-cup muffin pan with nonstick cooking spray; set aside.

Bring 3 cups of water to a boil.

Place Land O Lakes® Large Brown Eggs (9), 1 1/2 cups Sharp Cheddar Cheese (2 cups), Cottage Cheese (1 cup), Kosher Salt (1/2 tsp) and Simply Organic Black Pepper, Medium Grind (1/4 tsp) in blender container. Blend until mostly smooth.

Divide Cooked Bacon (6 slices) evenly among bottoms of muffin cups; top evenly with egg mixture. Top each with about 1 teaspoon Scallions (2 Tbsp) and remaining cheese.

Place a pan onto rimmed sheet pan and place it in the oven. Carefully pour hot water onto the sheet pan to halfway up side of rim, being careful not to spill in egg mixture.

Bake 28-30 minutes or until toothpick inserted in center comes out mostly clean and mixture reaches 165°F (70°C). Carefully remove the pan from the water bath, sliding a knife around each egg bite to release from the pan.
