Preheat oven to 350 degrees F (176 degrees C).
Into the bowl of a stand mixer, add Unsalted Butter (1 cup) and Granulated Sugar (1 1/2 cup). Mix until smooth.
Add Egg (2) and mix until smooth.
Add Vanilla Extract (1 teaspoon), Salt (1/4 teaspoon), and Baking Powder (1 1/2 teaspoon). Mix until smooth.
Add the Gluten-Free All-Purpose Flour (2 3/4 cup) and mix until well combined. Do not over-mix.
Shape the dough into balls and roll them in Cinnamon Sugar (to taste) to coat. Transfer cookies to a baking sheet and press down to flatten them out slightly.
Bake cookies for 10-15 minutes.
Allow cookies to cool on a wire rack before serving.
