Cooking Instructions

Step 1
Preheat oven to 400 degrees F (205 degrees C).
Step 2
Place Sweet Potatoes (5 1/2 cups) on a baking tray lined with parchment paper and roast for 1 hour and 30 minutes.
Step 3
Transfer potatoes to a bag, let cool then place in the fridge to chill overnight.
Step 4
The next day, peel the potatoes.
Step 5
Preheat oven to 350 degrees F (176 degrees C).
Step 6
Into the bowl of a stand mixer, add Butter (1/2 cup) , Granulated Sugar (1/4 cup) , and Brown Sugar (1/2 cup) . Cream together for 6-7 minutes.
Step 7
Add Eggs (2) one at a time, beating to combine.
Step 8
Add sweet potato a few tablespoons at a time, mixing as you go.
Step 9
Add Molasses (2 Tbsp) , Maple Syrup (1/4 cup) , Whole Milk (1/3 cup) , the juice from Lemon (1) , Vanilla Extract (1 1/2 Tbsp) , Ground Cinnamon (3 Tbsp) , and Ground Nutmeg (1/2 tsp) . Mix well.
Step 10
Transfer batter to 9-inch Pie Crust (1) . Smooth the top.
Step 11
Bake for 1 hour and 30 minutes.
Step 12
Slice and serve!
