Into a mixing bowl, add Medium Shrimp (12 ounce), Salt (1/4 teaspoon), Garlic (1/2 teaspoon), Fresh Ginger (1/4 teaspoon), Ground Black Pepper (1/2 teaspoon), and Onion (1). Stir to combine.
Place about 1 teaspoon of the filling into the center of each of the Wonton Wrappers (1 package). Brush the edges of the wonton wrappers with water, then fold them in half and press the edges to seal.
Press down around the filling. Bring the right corner around in front of the left corner and press the two together.
Bring a pot of Water (5 cup) to a boil. Cook the wontons for 2 1/2 minutes, then remove with a slotted spoon.
Discard the water and add Chicken Stock (4 cup) to the pot. Add the wontons and bring the stock to a boil. As soon as it comes to a boil, remove the pot from the heat.
Garnish wontons with Scallion (to taste) and Crispy Wonton Strips (to taste).
